Concept

"Ni Man Sakana" means "20,000 Fish" in Japanese, representing the 20,000 different species of fish that swim in the Pacific Ocean between Japan and Peru. The restaurant is inspired by the chef, Nobu Matsushisa. Nobu is a fusion chef who combines traditional Japanese dishes with Peruvian ingredients. When he moved from Japan to Peru in 1973, Nobu had to improvise his cooking techniques with the local culture and ingredients, modernizing the “Nikkei Style” of cooking. Nobu’s journey to Peru is what inspired this restaurant: the moment where two cultures are introduced to each other and realizing the common thread that connects them.
